A drying process can only be optimised if information about the drying profile and product to be dried are available.

The shape for a diagram as shown in Figure 3 depends on the vapour pressure drop between material and drying air, air temperature and flow rate, air quantity per time unit, evaporating surface and sorption properties of the product to be dried.

A diagram such as Figure 3 depends on the pressure drop between material and dryer air, further from temperature, air velocity, air quantity per time unit evaporating surface and sorption properties of the product. The measurement of material moisture during a drying process is often difficult and in many cases impossible.

Alternatively the weight of the evaporated water can be determined quite easily. The drying speed depends strongly on the water vapour pressure drop between the product to be dried and the dryer air.
